Perfect Peach and Parma ham salad with feta and pistachios

Peaches are wonderfully vibrant fruit with a sweet and slightly sour taste. That’s a taste that goes really well with the luscious velvetiness of parma ham and the salty tang of Feta cheese. This salad is easy to make and very refreshing. The pistachios give a great nutty crunch.
Serves: 2
Ingredients
- 150g Parma ham
- 2 ripe peaches cut into 8ths
- mixed salad leaves – frisee and rocket
- 100g Feta cheese
- 50g pistachios
- 1 tbsp runny honey
- Squeeze lemon juice
- 5 tbsp olive oil
- salt
- 1 tsp Dijon mustard
Method
- Cut the peaches in half, and then quarter each half to give 8 slices per peach – you can grill them lightly if you like, allowing them to cool before adding to the salad
- Mix the salad leaves and pile onto plates and crumble on the Feta cheese, sprinkle with the pistachios, layer on the Parma ham
- Mix together the honey, lemon juice, mustard and olive oil to form a sweet salad dressing
- Pour the dressing over the salad and serve!
